Keto Cream of Mushroom Soup

I made this last night and Steve & I LOVED it!  It’s a really inexpensive dish to make and super easy!  You can use any type of mushrooms you like!

Keto Cream of Mushroom Soup

If you're looking for a really inexpensive, really creamy and really delicious soup recipe…THIS IS IT!

  • Cutting Board
  • Knife
  • Measuring cups
  • Soup Pot
  • 1/2 cup Butter (Cut into slices for easier melting)
  • 8 oz Package of mushrooms (Sliced)
  • 1/2 cup Shitake mushrooms (Sliced)
  • 1/4 cup Onion (Diced)
  • 2 cloves Garlic (Minced)
  • 1 teaspoon Dried thyme
  • 4 cups Stock (beef or chicken)
  • 1/3 cup Heavy Cream
  1. Gather all of your ingredients and get them sliced, diced, etc.

  2. Melt butter in your soup pot

  3. Add both types of mushroom and sauté.

  4. Set aside some of the mushrooms for garnish and leave the rest in the soup pot.

  5. Add the onion and garlic

  6. Add thyme, stock and cream.

  7. Bring to a low boil

  8. Reduce heat

  9. Simmer until the mushrooms are tender

  10. Use and immersion blender or a counter top blender and blend the soup until wonderfully cream

  11. Pour into bowl and garnish with the mushrooms you set aside
