Equipment

Ingredients

  • 1/2 cup Butter Cut into slices for easier melting
  • 8 oz Package of mushrooms Sliced
  • 1/2 cup Shitake mushrooms Sliced
  • 1/4 cup Onion Diced
  • 2 cloves Garlic Minced
  • 1 teaspoon Dried thyme
  • 4 cups Stock (beef or chicken)
  • 1/3 cup Heavy Cream

Instructions

  • Gather all of your ingredients and get them sliced, diced, etc.
  • Melt butter in your soup pot
  • Add both types of mushroom and sauté.
  • Set aside some of the mushrooms for garnish and leave the rest in the soup pot.
  • Add the onion and garlic
  • Add thyme, stock and cream.
  • Bring to a low boil
  • Reduce heat
  • Simmer until the mushrooms are tender
  • Use and immersion blender or a counter top blender and blend the soup until wonderfully cream
  • Pour into bowl and garnish with the mushrooms you set aside
