Keto Cream of Mushroom Soup

Ingredients
- 1/2 cup Butter Cut into slices for easier melting
- 8 oz Package of mushrooms Sliced
- 1/2 cup Shitake mushrooms Sliced
- 1/4 cup Onion Diced
- 2 cloves Garlic Minced
- 1 teaspoon Dried thyme
- 4 cups Stock (beef or chicken)
- 1/3 cup Heavy Cream
Instructions
- Gather all of your ingredients and get them sliced, diced, etc.
- Melt butter in your soup pot
- Add both types of mushroom and sauté.
- Set aside some of the mushrooms for garnish and leave the rest in the soup pot.
- Add the onion and garlic
- Add thyme, stock and cream.
- Bring to a low boil
- Reduce heat
- Simmer until the mushrooms are tender
- Use and immersion blender or a counter top blender and blend the soup until wonderfully cream
- Pour into bowl and garnish with the mushrooms you set aside
