This is a hands down favorite at our house! It’s in expensive, it’s healthy and it’s DELICOUS! You can make this dairy free by substituting the water use in steaming the broccoli for the cream.
Cream of Broccoli Soup
Cream of Broccoli Soup…it doesn't get much better than this!
- Cutting Board
- Knife
- Soup Pot
- Strainer
- Blender or Immersion Blender
- 1 Head Broccoli with Stems (Cut and Sliced)
- 2 Cups Water
- 1.5 Cups Heavy Cream
- 1.5 Cups Butter (this is half of a stick) (Cut into pieces)

You're going to use the ENTIRE broccoli…stalks too!

Slice the stalk of the celery fairly thin so that it will steam as quickly as the florets

Steam the broccoli

The stalks are the toughest pieces. Steam until a fork inserts into a piece stalk

Strain
If you're going to make this dairy free keep the water once you've strained the broccoli

Put butter in the blender

Add the cream (or water)

Add broccoli and blend until smooth and creamy

You can add bacon bits and/or shredded cheese. Season with salt and pepper to taste.
